Chicken Fried Rice

2, Bonless Skinless Chicken Breasts - grilled and diced2 c. day old white rice5 long scallions diced 1 tbls black pepper4 tbls soy sauce, low sodium3 large eggs2 tbls water1 c. frozen peas
Trim fat and season raw chicken breasts as desired (spicy cajun and black pepper recommended). Grill. Dice into small pieces.
Spray large skillet with cooking spray and heat to medium. Toss in cold rice, chopped scallions, pepper and soy sauce. Allow to brown. Add in chicken and frozen peas continue to cook covered until peas are heated. In another bowl beat eggs with water. Turn the heat on the rice up to med/high and add in the eggs, stirring quickly so they cook and spread throughout the rice.
Serve hot.
