Vegetable & Beef Casserole

Ingredients
# Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4 (remove)# Butternut Squash, 200 grams (remove)# Carrots, cooked, 100 grams (remove)# Onions, raw, 1 small (remove)# Green Beans (snap), 6 beans (4" long) (remove)# *Baked Potato, with skin, 3 small (1-3/4" to 2-1/2" dia.) (remove)# Beef chuck, arm pot roast, 500 grams
Directions
Chop up all the vegetables and place in tin foil. Place meat on top and sprinkle with Salt. Pour over 60ml of Canola oil. Bake in oven for approximately 180minutes on 160 degrees C
