Cauliflower, raw, 1 head, large (6-7" dia) (remove)Red Ripe Tomatoes, 3 medium whole (2-3/5" dia) (remove)Onions, raw, 0.5 slice, large (1/4" thick) (remove)*Coriander (cilantro) leaves, raw, 0.5 cup (remove)*Fresh chopped mint leaves, 2 tablespoons, 1 serving (remove)*Olive Oil, Kirkland, 3 tbsp (remove)
Pour the oil to a deep dish. Let it heat at medium. then put jeera, turmeric, pavbhaki masala, bada elachi.
Cut the onions and tomatoes and cauliflower(Gobi)
Make the staple coriander mint chutney with garlic and ginger.
Saute the cut onions and tomatoes till the carmelize. Then add the cut gobi.Add a little water(1/2 cup) .Cover and let cook till the Gobi is just cooked enough. Overcooking makes it become mushy.
Serve with Roti.
