Modified Shrimp Fried Rice

Ingredients
3 cups cooked Uncle Ben's wholegrain brown rice8 oz pkg frozen shrimp, tails removed1 cup frozen peas1 cup chopped red peppers1/2 cup chopped onion (didn't have green)1 cup chopped frozen peaches1/4 cup Egg Creations2 tbsp olive oil2 tbsp soy saucepepper to taste
Directions
Heat olive oil in skillet. Add onion and cook til opaque. Add red pepper, peaches and peas, heat until peas and peaches are almost thawed and peppers are softened, then add rice. Cook 2-3 minutes more until heated through then make a well in center of pan and add egg creations. Scramble egg until almost cooked, then mix all together and add soy sauce and pepper to taste.
