Low Fat Apple Bread Pudding

Non-Stick Cooking Spray1-1/2 lb. Loaf of Whole Wheat French Bread1 C Walnuts, chopped2 Apples, cut into 1x2-inch pieces1 Tbsp Lemon Juice1/2 C Low-Fat Butter Spread or Margarine, melted1/2 C Splenda1 Tbsp Ground Cinnamon1-1/4 C Non-Fat Egg Substitute1 Cup Splenda Blend Brown Sugar1-1/4 C Non-Fat Half n' Half1-1/4 C Non-Fat Milk1 tsp Vanilla
In a large bowl, combine the bread and walnuts. Spread the mixture on the bottom of a baking dish sprayed with non-stick cooking spray. In a large bowl, combine the apples and lemon juie and toss to coat. Add the melted spread, sugar, and half of the cinnamon. Gently toss with the bread and walnuts in the baking dish. In a separate bowl, mix together the egg substitute, brown sugar, half-and-half, milk, vanilla and remaining cinnamon.
Pour the egg mixture over the bread mixture. Cover with aluminum foil and refrigerate overnight. In the morning, preheat the oven to 375 and bake for 1-1/2 hours, or until set and the top is puffy and browned. let sit 10 minutes before serving.
