Chopped Salad

Ingredients
Cucumber, 1 cup chopped and peeledVine Ripened Tomatoes, 1cup choppedSweet Corn, Fresh, 1 ear, mediumOnions, raw, 1 cup choppedAvocado, California (Haas), .5 fruit, slicedBacon, 2 medium slices, cooked and choppedCilantro, Fresh, .25 cup, chopped
Directions
Brush corn with extra virgin olive oil, wrap with foil and cook in a 375 degree oven for 20 minutes
When corn is finished cut kernels off the cob
Fully cook bacon and chop
Mix all ingredients except avocado
Slice avocado and place on top
Serve with your favorite dressing
