Grilled Radicchio

Ingredients
2 large heads radicchio3 TBSP fresh orange juice2 1/2 TBSP extra virgin olive oil1/2 tsp grated orange zest1/4 tsp freshly ground black pepper3/4 tsp sea salt (or other coarse salt)1 orange, cut into 8 wedges
Directions
1. Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Position the cook rack 4 to 6" from the heat source.
2. Pull any wilted outer leaves from the heads of radicchio.
3. Cut each head into quarters through the stem end, leaving the core portions intact so the quarters hold together.
4. In a small bowl, stir together the orange juice, olive oil and the orange zest.
5. Brush this mixture onto the cut sides of the radicchio quarters.
6. Sprinkle the 'painted' quarters with pepper.
7. Arrange on grill rack or broiler pan. Grill or broil, turning frequently, until tender--about 8 to 10 minutes.
8. Transfer the radicchio quarters to individual plates and sprinkle evenly with the salt. Place an orange wedge on each plate and serve immediately.
Makes 8 servings, each consisting of a quarter of a radicchio.
