Health Conscious Chili - Crockpot

1 lb Ground Turkey1 can Tomato Paste (low sodium)2 tblsp Chili Powder2 tsp ground Cumin1 tsp Onion Powder1 tsp Garlic Powder1 Can Tomatoes with Chili Peppers4 Cups Chicken Broth (low sodium)1 Can Pinto Beans1 Onion, chopped1 Cup raw Pearl Barley
Brown the ground turkey in a non-stick skillet. When done, add the tomato paste and spices. Stir to blend.
In a crockpot, combine the chopped onion, tomatoes, broth, pinto beans and barley. Stir in the turkey mixture and stir well to distribute ingredients.
Cover and cook on low for 8 - 10 hours. The Barley will thicken the chili, adding lots of extra fiber. Using low sodium products will make this a very healthy dish that is also low in fat. It can be spiced up as desired with the addition of jalapeno peppers or picante sauce.
