Jeff's Low-Fat Chicken Parmigiana

Ingredients
* 4 - Perdue Boneless, Skinless Chicken Breasts, All Natural, 4.8 oz. each* 1 cup - Cento San Marzano Peeled Tomatoes (with juice)* 2 - Bread, Arnold's 100% Whole Wheat Bread (toasted and crushed for bread crumbs)* 2 - egg white, fresh* 1/2 cup - Stop and Shop Fancy Mozzarella Part-Skim Shredded Cheese
Directions
Preheat oven to 400 degrees

1. Toast and crush the bread into crumbs.
2. Place the egg whites into a shallow bowl.
3. Dip each chicken breast into the whites and then into the crumbs.
4. Spray a baking dish with non-stick cooking spray and place the chicken in the pan.
5. Bake for 25 minutes.
6. Cover the chicken with the tomatoes and bake for another 10 minutes.
7. Cover with the cheese and bake for 5 minutes or until cheese is melted.
8. EAT!

Makes 4 servings of 1 chicken breast each.
