kelligirl's veg & barley soup

Ingredients
14 oz. can petite diced tomatoes16 oz. water (adjust to your liking)1 c. fresh broccoli, chopped1/2 medium onion, chopped1 c. sliced carrots1 c. fresh snap peas1/4 c. sweet red pepper2 oz. Quick Barley1/2 small head cabbage3 t. better than boullion base
Directions
Makes 8 1. cup servings (just quessing on this - I really have no idea.

Mix everything except barley together and simmer for and hour or until vegetable are done.

Add quick barley and cook an additional 10-15 minutes.

    Since I didn't have any snap peas, cabbage, or barley, I substituted a bunch of other stuff: whole red, yellow & orange bell peppers, celery & yellow squash.

    I also used itty, bitty pasta instead of barley. It was a big hit at our house and I'll make it again. - 4/24/10
