Ingredients:*Canola Oil, 0.25 cup (remove)Brown Sugar, 0.75 cup, packed (remove)Egg, fresh, 2 medium (remove)*Flour, white, 0.5 cup (remove)*Bob's Red Mill 100% Stone Ground Whole Wheat Pastry Flour, 0.75 cup (remove)*HyVee Cinnamon Apple Sauce, 4 oz (remove)Baking Powder, 1 tsp (remove)Salt, 0.25 tsp (remove)Vanilla Extract, 0.5 tsp (remove)
Cream first three ingredients together. at low speed for ~3mins. whisk dry ingredients including 1/2tsp of cinnamon. add 1/2 applesauce and real vanilla extract and the grated carrots( grate 1 carrot roughly) ...stir blender on slow. then add the dry ingredients. Add raisins (1/4cup) is neefed. Load onto cupcake liner and bake at 350 for 20mins. Yummy and only 120cal a muffin.
Homemade applesauce.
makes 1/2 cup
1 large apple
1 tbsp brown sugar
1/2cuo water
peel, core and cut apples in quarters. put all ingredients in a saucepan and simmer on low for 15-20mins. Let apple cool and puree in blender/chopper or with a fork
