1) Preheat oven to 375 F degrees. Prepare muffin tin with paper liners or cooking spray.2) In a medium bowl, combine spelt and whole-wheat flours, oatmeal, cocoa powder, apple, baking soda, baking powder, and pecans. Stir until combined. 3) In a large bowl, mix together buttermilk, yogurt, vanilla, egg whites, and honey. Add dry mixture and stir until moistened. Then gently stir in cranberries. Fill muffin cups halfway. Bake for 20 minutes or until toothpick comes out clean. Let cook for 5 minutes.
Makes 18 muffins.
