Mini Chocolate Stout Cupcakes

24 packets of stevia sweetener (such as Truvia)1 cup granulated sugar1 bottle of your favorite stout beer (Guinness, Brooklyn, etc.)2 cups whole wheat flour1 egg2 egg whites.75 cup unsweetened cocoa powder.75 cup nonfat plain Greek yogurt1 stick (1/2 cup) I Can't Believe It's Not Butter for Baking, melted1 tsp vanilla extract1 tsp baking soda
Preheat oven to 350 degrees F. Grease a mini-muffin pan, or put paper muffin cups in a mini-muffin pan.
Mix the dry ingredients in a bowl until combined.
In a separate bowl, mix the beer, vanilla, and melted margarine using an electric mixer. When thoroughly combined, add all egg ingredients and yogurt.
Add the dry ingredients to the wet and mix until combined.
Pour in muffin cups until each is 3/4 full. Bake for 12 minutes or until toothpick comes out clean from center. Let cool completely before frosting.
Yields approximately 96 mini cupcakes, 4 per serving.
