Thai Chili Tofu with Quinoa

Ingredients
4 whole water chestnuts, diced1c of sliced onions3 diced cloves of garlic3/4 c of diced firm tofu1/2 cup of light coconut milk6 TBS of World harbor Thai sauce 3/4 cup of dry red quinoa
Directions
Squeeze water out of tofu by placing in between to plates lined with towels and stick some heavy cans on top. Then dice and marinate in Thai sauce. Heat EVOO and saute onions and garlic, add water chestnuts, then tofu. Stir l in coconut milk and serve over quinoa.
