Tofu Skillet Supper

Ingredients
4 Tbsp. olive oil1/2 c. chopped red onion4 c. red potatoes, sliced (about 4 medium)2 c. frozen cut green beans1 t. Italian seasoning1 t. garlic salt1 pkg. tofu (12-14 oz., I used Mori-Nu)2 roma (plum) tomatoes, thinly sliced2 hard-cooked eggs, chopped
Directions
1. Heat oil in 12-inch skillet over medium-high heat. Cook onion in oil 2 minutes, stirring frequently. Stir in potatoes; reduce heat to medium-low. Cover and cook 10 - 12 minutes, stirring occasionally, until potatoes are tender.
2. Stir in green beans, Italian seasoning and garlic salt. Cover and cook 6 to 8 minutes, stirring occasionally, until beans are tender and potatoes are light golden brown.
3. Stir in tofu and tomatoes. Cook 3 to 5 minutes, stirring occasionally and gently, just until hot. Sprinkle each serving with egg.

    I halved the recipe, served it as dinner for two. Also used garlic powder to lower the sodium and used a non-stick saute pan so I could reduce the oil. Great recipe! - 7/3/07
