Southern Matzoh Balls

6 Matzoh1/4 to 1/2 cup Matzoh Meal2 Large Eggs1/2 to 1 whole Onion, diced1/4 cup Butter1 tablespoon Parsley FlakesSalt to taste
Break up Matzohs up into large pieces and soak them in a water bath. Meanwhile, melt butter in large skillet over medium heat and add onions. Continue to cook until well browned. Take off stove.
Squeeze water out of Matzoh and put into skillet with cooked onions. Cook over medium high heat until mixture is somewhat dry and pulls away from the sides of the skillet. Place into large bowl and add eggs, parsley flakes, salt. Mix together. Add Matzoh Meal discriminately until mixture is sticky to the touch but you can form nice ball shapes. Make balls slightly smaller than golf ball size and set aside until all mixture is formed.
Place in boiling water and cook until balls rise to the top. Serve with Brisket and Gravy.
