Ingredients
*Whole Wheat Penne (dry), 2 oz Shrimp, cooked, 8 large (or 12-14 medium)goat cheese, 1 ozSpinach, fresh, 3 cup Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) Walnuts, .5 oz*Pesto Sauce, 3 Tbsp
Directions
Cook pasta according to package directions; drain and transfer to a large bowl. Add shrimp, cheese, spinach, tomato, waluts, and pesto, stirring well to help wilt the spinach and distribute the pesto. You can also put back on the stove for a minute.
Makes 2 large servings

    Fantastic! I didn't have walnuts, so skipped adding those and had light feta cheese on hand, so I used that instead of goat cheese. It was very delicious! Thanks for sharing this recipe! - 4/11/10
