Sherry Flank Steak

1 c dry sherry OR orange juice1 tsp dried leaf basil1 tsp dried leaf marjoram1/2 tsp dried leaf oregano2 flank steaks (1 1/2 lb each)1/2 tsp salt1/4 tsp pepper
Serves 12 (4 oz portion per serving)
1. Combine sherry (or orange juice), basil, marjoram and oregano in gallon-sized plastic food storage bag. Add steaks. Refrigerate for 24 hours.
2. Prepare grill so coals are medium hot.
3. Remove steaks, reserving marinade.
4. Grill steaks 5 to 6 inches above medium-hot coals for 5 minutes. Brush with marinade.
5. Turn and grill 5 to 8 minutes or until cooked to desired doneness (130 degrees for medium rare).
6. Remove steaks. Sprinkle with salt and pepper.
7. Let stand 5 minutes.
8. Diagonally cut steaks across grain into thin slices.
