Vegetable Soup with Turkey

Ingredients
1 half onion, chopped2 ribs celery, chopped1/4 red bell pepper, chopped2 lg. carrots, peeled and diced1 T. olive oil1/4 c. brown rice1 can diced tomatoes4 c. chicken or turkey broth3/4 c. cooked pinto beans8 oz. diced turkey breast (or chicken)
Directions
Saute diced veg. in olive oil about 5 min., add rice and stir well. Add broth and tomatoes, bring to boil then reduce heat and simmer 45 min. Add beans and turkey and simmer 10 min longer.

Allow to cool and then reheat for best flavor. Use whateverveg. you have on hand. Makes about 12 cups soup.
