Red Bean and Whole Grain Rice Dish

1 cup raw Black Japonica rice ( 2 cups cooked )1 1/2 cups cooked red beans (or 1 16 ounce can, rinsed and drained)1 bunch scallions(green onions), sliced thin (with about 1/2 of green part removed)1 Tbs chopped parsley or cilantro1 clove minced garlic1/4 tsp salt2 tsp cajun type spice1/4 tsp ginger, powdered1/4 tsp cumin1 Tsp oil, to sauté unions and garlic
This recipe uses left-over rice. If you do not have any, cook one cup according to package directions.
1. Saute the onions and garlic about 5 minutes, stirring constantly
2. Add the beans and continue stirring. Add all of the spices and cook for about 3 minutes on high to get the beans hot.
3. Reduce the heat to low. Stir in the rice until it is warm. If liquid is needed, add 1 tablespoon of water.
4. Remove from heat and serve.
Yield: 4 servings
