Easter Leftovers - Omelette Sandwiches

Ingredients
4 large eggs1 cup diced ham1 medium onion, chopped1 TBS spicy brown mustard1/4 cup shredded 50% fat cheddar cheese4 whole wheat bagel thins
Directions
beat eggs with mustard, until well blended.

Spray medium fry pan with cooking spray. Heat pan on medium high heat.

saute onions for a couple of minutes. add ham. Continue cooking, stirring occasionally, until onions are translucent. Drizzle egg & mustard mix evenly over ham & onions. Cook for a few minutes until eggs are mostly set (don't stir). Sprinkle shredded cheese over top & cover pan with a lid. Reduce heat. Continue cooking for 3 or 4 minutes, until eggs are completely set & cheese is melted.

Divide into 4 wedges and served on toasted bagel thins.
