Lime and Cilantro Brown Rice

Ingredients
1 cup brown rice2 cups water1 garlic clove, crushed3-4 scallions, chopped3 Tbsp Cilantro, chopped2 Tbsp soy sauce (I use light soy sauce)1 Tbsp Rice Wine VinegarZest of 1 limejuice of half a limesalt and pepper
Directions
Cook the rice according to the package directions. Toss the rice with the rest of the ingredients. Season with salt and pepper if needed.
