Low-carb Southwestern Breakfast Casserole

10 cage free brown eggs1 cup Trader Joe's lite cheese blend2 Trader Joe's jalapeno chicken sausages, diced1 green bell pepper, diced1 tsp cajun seasoning1/4 tsp black pepper
Preheat oven to 375. Use nonstick cooking spray or olive oil to grease a 8x8 glass baking dish. Layer sausage, peppers, and cheese in the bottom of the dish. In a separate bowl, use a fork or whisk to combine egg yolks and whites with the cajun seasoning and pepper. Be sure all yolks are combined. Pour eggs over layers in baking dish and use fork to stir, ensuring ingredients are equally mixed. Bake in oven for 25-30 minutes, or until lightly browned on top. Allow to cool slightly before cutting. May be stored in refrigerator in separate containers for easy reheating.
Makes 6 servings.
Tasty with salsa on top...or in the car on the way to work! Also, could substitute eggs for more egg whites or egg substitute to decrease fat/cholesterol.
