4 large eggs2 large egg whites (liquid egg whites)Salt & Pepper or other seasoning to tasteDash hot sauce1/4 cup each chopped onions and green peppers (I used Flav-R-Pac Omelet Blend)4 Mission Life Balance Plus Whole Wheat Tortillas1/2 cup shredded 2% milk cheddar jack cheese1/3 cup Herdez salsa (I use medium)
4 Servings.
Beat eggs, egg whites, seasonings and hot sauce. Spray nonstick pan and place on medium heat. Saute' the onions and peppers until soft. Add the egg mixture and cook and "scramble" until done. Divide into four servings and add to tortillas, top with cheese and salsa and enjoy.
