Spinach Salad with Cherries and Pomegranate Vinaigrette

Ingredients
For the Dressing:2 tbsp bottled or fresh pomegranate juice1 tbsp balsamic vinegar1 tsp honey2 tbsp olive oil1⁄4 tsp black pepperFor the Salad:8 cups fresh spinach, cleaned and stemsremoved1⁄2 cup red onion, thinly sliced (see Note)1⁄3 cup dried cherries1⁄4 cup slivered almonds, toasted2 ounces goat cheese, crumbled
Directions
1. Make the Dressing. Prepare the vinaigrette
by placing the pomegranate juice, vinegar, and
honey in a blender. Slowly drizzle in the oil while
the blender is running to emulsify. Add the pepper.
2. Make the Salad. In a large bowl, toss together
the spinach, onion, and dried cherries.
Add the dressing and toss to coat. Divide the
salad evenly onto 4 plates and garnish with the
toasted almonds and goat cheese.
Note: To tame the bite of the red onions, soak
them in ice water for 10 minutes.

    Very tasty - actually found I have mother in my balsamic - and didn't know if I could use it - so I subbed wine vinegar and it was good. A serving of dressing is 1 Tablespoon. I made the dressing as written but salad for one. - 6/16/10
