Mama's Strawberry Pie

2 – 3 boxes of strawberries (two of the big ones or 3 or the little ones)½ - ¾ cup sugar3 T cornstarch½ cup water4-5 oz cream cheese3 T powdered sugarI pie crust, bakedWhipping cream
Instructions:
12 minutes baking for the pie shell. Let cool.
Hull strawberries.
Save approximately half the strawberries whole.
Cut up the remaining strawberries into chunks and put them in a saucepan.
Mix sugar and cornstarch; add to berries.
Add ½ cut water.
Cook and stir until mixture clears and thickens.
Add a couple drops of red food coloring if desired.
Remove from heat.
Mix cream cheese and powdered sugar.
Spread on bottom of cooled pie shell.
Place whole berries (cut in chunks if very large) on top of cream cheese mixture.
Pour slightly cooled, cooked strawberry mixture over berries in pie shell.
Allow to cool, and then refrigerate until set.
Top pie with fresh, slightly sweetened (with a spoon or two of powdered sugar) Whipped cream.
This recipe is HEAVY on the whipped cream, you can skip, go light or use a can...however we use the old family recipe.
