Italian-style Pot Roast

Ingredients
2 lbs sirloin roast1 28 oz can diced tomatoes2 stalks celery diced1 large onion diced1 green pepper sliced3 cloves garlic, diced fine1 jalapeno pepper1 TB olive oil
Directions
Add onions, peppers, celery and garlic to olive oil and saute unti soft, add to small roasting pan that can be tightly covered. Add the diced tomatoes to the veg and season with salt and pepper. Brown the meat in the remaining olive oil on all sides . Add the meat, spooning some of the mix over the meat. Place in a 200 degree oven for 3 1/2 - 4 hours.

*Note this can be done in the slow cooker, but I find it always comes out better in the oven.
