1/2 cup sliced green onion3 Tbsp butter1/4 cup flour1/4 tsp salt and pepper1 can chicken broth1 160mL can fat free evaporated milk1 can mushrooms, drained1 356g can cooked, chunked chicken breast (or 2 cups of chopped, cooked chicken)1/4 cup white wine
Cook onion in butter until tender. Stir in flour, salt and pepper until smooth. Slowly whisk in chicken broth and evaporated milk and cook, stirring occasionally, until bubbly. Stir in mushrooms and chicken; turn to low. Add white wine and heat through. Do not allow to boil or wine will curdle. Makes 8 servings (approx. 1/2 cup each)
