Portobello Mushroom Burgers with Caramelised Onion & Blue Cheese

Ingredients
2 Tbsp olive oil700g onion, thinly sliced1 Tbsp fresh rosemary, finely chopped2 Tbsp balsamic vinegar1/4 cup brown sugarSea salt & black pepper750g portabello mushrooms, peeled1 Tbsp olive oil1/2 Tbsp garlic, finely chopped200g blue cheese6 ciabatta rolls100g rocket
Directions
Caramelise onions - put oil, onion and rosemary kinto a large saucepan over a medium low heat and cook for 30 minutes until golden. Add balsamic vinegar and brown sugar and cook another 5 minutes. Season with salt & pepper then remove from heat and keep warm.

Peel mushrooms. Spray with olive oil and sprinkle with garlic before placing on hot grill. Cook 10 minutes until soft and cooked through.

Sprinkle a little blue cheese over mushrooms. Warm rolls on the grill.

Add rocket leves to roll bases, add warmed caramelised onions, top with mushrooms.
