Pasta with Spinach and Smoked Sausage

Ingredients
1/4 lb. smoked turkey sausage1 large leek, sliced2 cloves garlic, minced1 tsp olive oil2/3 C chicken broth1/2 of a large red pepper, chopped6 C torn fresh spinach8 oz. whole wheat pasta1/4 C fresh basil1/4 tsp black pepper
Directions
1. Cut the sausage lengthwise into quarters. Slice into 1/4-in. pieces. In a large skillet, cook leek, red pepper and garlic in hot oil until leek is tender. Stir in sausage and chicken broth. Bring to boiling; reduce heat. Add spinach. Cook, stirring frequently until spinach is just wilted. Remove from heat.

2. Meanwhile, cook pasta according to package directions; drain. Return pasta to saucepan. Add spinach mixture, basil and black pepper. Toss to coat. Serve immediately. Makes 6 servings.

    This was good! But, I really mixed it up a bit--I served it with rice and added some diced tomatoes and a bit of red wine. Wow! Spectacular. I can't wait to try it on pasta. - 9/15/08
