Rustic Beanless Chili

Ingredients
4-14 oz. cans whole tomatoes, no salt added1 lb. 93% lean ground beef1 large onion6 tsp chili powder3 tsp ground cumin seed2 tsp cayenne or red pepper1/2 tbsp olive oil1/2 tsp salt (optional--lite salt would further reduce sodium)
Directions
Brown ground beef with 1 tsp chili powder, 1/4 tsp ground cumin, and 1/4 tsp cayenne pepper in dry skillet, drain. While beef is browning, roughly chop the onion.
In a large sauce pan, heat olive oil and add onion and cook until translucent.
Add tomatoes and juice, crushing them with your hands.
Add cooked ground beef and stir.
Add the spices to taste. If you like it spicier, add more. If you like it less spicy, add less.
Simmer on low heat for at least an hour. The longer it simmers the spicier it will be.
Leftovers will increase in spiciness.
You can add cheese and eat with tortillas depending on preferences.
Serves about 6.

    I made this with 1 large can of tomato sauce and it was pretty good. I appreciate the absince of beans b/c my hubby has an aversion to veggies (he's working on it though). I put it on a salad w/ a little cheese. - 9/25/09
