3/4 lb red potatoes (about 2) cubed and cooked2 slices lean boiled ham, chopped6 eggs1/4 c. 2% milk1/3 c. Miracle whip light dressing1/4 tsp salt1/4 tsp pepper1/2 c. shredded cheddar cheese
Heat oven to 350. Combine potatoes, ham and cheese and spoon into 9-inch pie plate, sprayed lightly with cooking spray. Beat eggs and milk in a small bowl, stir in dressing, salt and pepper. Pour egg mixture over potatoes.
Bake 25-30 minutes until center is set. Let stand 10 mintues before cutting to serve.
