Flaxseed Cupcakes

Ingredients
1 box of cake mix (whichever flavor is prefered, but Duncan Hines strawberry mix was used here)1 1/3 cups of flax seed meal1 1/3 cups of water3 eggs
Directions
Makes 24 cupcakes

Preheat oven to 350 degrees. Pour cakemix, water, flax seed meal, and eggs into bowl. Beat for 2 minutes on medium speed. Immediately pour into cupcake cups. Bake for 18-21 minutes. Cool completely before icing.

    Taste like a really sweet muffin (or like the muffins you buy in the store in the bakery) so I didn't add icing to make them healthier and more of an anytime treat. Also I used white cake mix. Will use this recipe again! - 5/23/12
