Turkey Taco Salad Tortilla Cups

Ingredients
4.5 oz lean ground turkey meat1 Tbsp. low-sodium taco seasoning2 cups cleaned torn romaine lettuce½ medium tomato¼ avocado2 Tbsp. shredded low-fat cheddar cheese2 Tbsp. Taco Sauce, Mild14 tortilla chips- Baked! Tostitos Scoops
Directions
Serving Size: 1 Person

Season the turkey meat with taco seasoning. Cook turkey in a skillet sprayed with non-fat cooking, stirring often until cooked thoroughly, no pink.

While the turkey is cooking, in a salad bowl, prepare the taco salad. Combine the romaine lettuce with tomato, sliced avocado, sliced cucumber, and shredded low-fat cheese.

Equally divide the warm turkey on the bottom of individual tortilla chip scoops. Top with taco salad. Top with taco sauce if desired for additional moisture.

Alternative Suggestion: Pile the taco salad in a deep salad bowl. Pile warm turkey on top of taco salad along with crushed tortilla chips. Top with taco sauce if desired.
