Spicy Quinoa Chili

1 large onion, chopped4 cloves garlic, minced2 Tbsp olive oil28 oz. fat-free, low-sodium chicken or vegetable broth1/2 cup water1 can (10 oz) of diced tomatoes with green chili peppers - do not drain3 tsp cumin powder2 tsp chili powder1 tsp ground coriander1 cup quinoa, rinsed and drained4 plum tomatoes, seeded and chopped
Heat olive oil over medium-high heat.
Saute onion & garlic until onion is slightly translucent and tender.
Stir in broth, water, canned tomatoes (including the liquid from the can), cumin, chili powder and coriander.
Gently stir in the rinsed quinoa.
Bring mixture to a boil.
Reduce heat to low and cover.
Simmer for about 20-25 minutes or until quinoa is tender.
Remove from heat, stir in fresh tomatoes.
If desired, you can garnish with chopped green onions, shredded cheese or low-fat sour cream.
