Gluten Free Apple Cake

Ingredients
Filling:4 apples, peeled and sliced into very thin wedges1/8 c. currants, dried1/8 c. walnuts, chopped1 tsp. xanthan gum1/2 c. diabetisweet1/2 tsp. vanilla1/2 tsp. cinnamonBatter:2 c. almond meal1/2 c. almond milk4 eggs1/2 tsp. baking powder1 /2 tsp. vanilla1/2 cup diabetisweet
Directions
Prepare a 9 x 11 inch pyrex pan with cooking spray. Preheat oven to 375 degrees. Place apples in bowl. Toss with diabetisweet and xanthan gum. Stir in vanilla, cinnamon, currants and wanuts. Spread into pan.

Combine almond meal, almond milk, eggs, baking powder, diabetisweet and vanilla together and stir until about the consistency of pancake batter. Add more almond milk if the batter is too sticky to pour. Pour over the apples in the prepared pan. Bake for 40-50 minutes at 375 degrees until golden brown.
