Twice Baked Potatoes with Cauliflower

Ingredients
4 med. baking potatoes1 cup frozen cauliflower with sauce (cheese cubes in the bag)1/2 cup skim milk, warmed1/4 cup reduced fat sour cream2 Tbsp. unsalted butter1 tsp. salt
Directions
I microwaved potatoes until they were fork tender, then I scooped out the pulp of the potatoes and sprayed skins with cooking spray and put in oven at 375 for 10 minutes to get them crisp. In the meantime, I microwaved the cauliflower and pureed it in the food processor. I added butter, milk and sour cream to potato pulp and blended using a mixer, added cauliflower and then salt. I scooped filling into the potato skins and sprinkled with paprika (optional). I had so much filling left that i baked the remaining in a dish along side the potatoes.

    The only problem I had is it was cold by the time I got done. But I heated it up in microwave and was great. 7 yr old wants leftover in luch. - 4/18/10
