Vegetarian Quiche

Ingredients
1 tbsp olive oil1/2 cup Chopped Onion1/2 cup Chopped Red pepper1/2 cup fresh mushroom1 clove chopped garlic1 cup baby spinach4 large eggs2 tbsp sour cream2/3 cup skim milk1 refrigerated pie crust
Directions
Preheat oven to 350. Place pie crust in pie pan and poke holes in bottom of crust. Bake for 9 minutes take out of oven. In a large bowl add eggs, milk, and sour cream and whisk. In a Sautee pan add onion, garlic, mushroom and pepper. Once veggies are softened add fresh spinach, cook until spinach is wilted. Add veggies and cheese to egg mixture pour into pie pan and cook for 25 minutes. Let sit for 10 minutes. Makes one 9inch pie pan. Cut into 8 Pieces.
