1 carton egg beaters1 bag veggie cheese1 cup grits1 cup morningstar meal starter1 handful spinach leaves1/2 cup onions1/4 cup green peppers1 tsp oregano1/2 tsp garlic powder1/2 tsp onion powder
cook grits.
add meal starter, chopped onion and green peppers,
add 1/2 cheese and spices
pour in carton of egg beaters
mix well.
put spinach on top, then chop it in with a spatula
when spinach is completely mixed in, top with remaining cheese
bake at 350 for approximately 25 minutes or until casserole in firm. Makes 12 large servings.
top with salsa and soy sour cream or hot sauce.
