Whole Wheat Sweet Potato Crackers

Ingredients
1.5 cups whole wheat flour2.5 tbsp baking powder3 tbsp I Can't Believe It's Not Butter for Cooking & Baking.25 cup Light Silk Plain Soy Milk1 cup mashed sweet potato1 tsp garlic powder1 tsp nutmeg.5 tsp salt.5 tsp pepper
Directions
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

Sift the dry ingredients together in a large bowl. Add the butter and mix manually until the mixture resembles bread crumbs.

Blend the soy milk and the mashed sweet potato until it makes a creamy puree. Add the sweet potato mixture to the dry ingredients and combine by hand.

Put dough on a lightly floured surface and kneed about 50 times. Split dough into 4 sections and roll each into a very thin sheet. Cut into squares, triangles, or rounds. Repeat with all 4 sections of dough.

Place on the parchment paper lined cookie sheet. Bake at 350 degrees F for 10 minutes, flip the crackers, and bake for another 4 minutes. Cool on a wire rack,

Makes about 10 servings of 12 crackers each.
