Cracked Wheat Honey Bread, kneaded

Ingredients

1 1/4 cups water1/2 cup bulgur1 package instant yeast2/3 cup warm water1/2 cup low fat milk3 tbsp honey5 cups ww flour
Boil 1 1/4 cups water. Pour in bulgur and simmer for 10 minutes. Allow to cool to luke warm.
In mixer with dough hooks, pour in the cooked bulgur, butter, water, milk and honey. Add yeast, salt and flour. Turn on and allow mixer to knead dough for ten minutes.
I like to then knead by hand for a few minutes on a lightly floured surface.
Allow to rise until doubled in bulk in a greased bowl.
Grease 2 loaf pans. Divide dough into two. Place in pans, and allow to rise again.
Bake in a 375 degree oven for 30 - 35 minutes or until loaves sound hollow when tapped.
Remove from oven and remove from pans. Brush oil or butter on tops.
Allow to cool on wire rack.
Makes 20 slices (2 loaves)
