Chicken & Green Chili Soup/Chili

1 medium red onion, chopped1 large red bell pepper, chopped1 jalapeno, chopped1 serrano pepper, chopped3 99% fat free chicken breasts, shredded2 4oz cans green chilies1 10oz can green enchilada sauce1 16.7oz bottle salsa verde3 cups water1 tbsp chili powder1-1/2 tsp ground cuminsalt and pepper to taste
Cook chicken, set aside to cool.
Saute red pepper, jalapeno, serrano and onions until tender. While sauteing shred chicken (food processor works great).
Combine pepper and onion mix, shredded chicken, and remaining ingredients in pot and cook on medium low for 30 minutes for flavors to absorb.
Makes 8 1-cup servings
