Mom's Healthy Veggie Soup

Ingredients
6 cloves of garlic1 large onion5-6 tbls olive oil6 cups chicken broth (or water and bouillon)2 cups water3 medium potatoes6 cups chopped broccoli6 cups chopped cauliflowerspices to taste (I use basil, curry powder, cumin, oregano, salt, pepper, garlic powder, and onion powder)
Directions
Sautee onions and garlic in olive oil until soft. Add broth, water, and potatoes; bring to a boil and cook for about 5 minutes. Add the broccoli and cauliflower and return to boil. Add spices to taste and cook until all veggies become very soft (about 30 minutes). Allow soup to cool. Blend mixture on "puree" setting on blender until smooth. Enjoy hot or cold, or try adding some grated cheddar cheese for an extra treat.
