Cauliflower Salad that Tastes Like potato Salad

1 med head of cauliflower6 hard boiled eggs peeled and chopped chunky2 large celery stalks diced2 green onions or 1/4 cup snipped or chopped1/2 cup light mayonaise1/4 cup pickle relish1/2 tsp each of salt and pepper (or season to taste)1 tsp of paprika
Cut cauliflower into flowerets (about 10 cups). In large saucepan cover cauliflower with water and bring to boil over medium high heat. Boil until tender crisp (about 6 minutes) . Drain and rinse under cold water. Put in large bowl and using a knife cut flowerets into bite size pieces. Add chopped eggs, celery, green onions. Add the mayonaise, relish, salt and pepper and stir gently. Sprinkle with paprika and refrigerate for several hours or overnight.
