Ingredients
1 Tbsp. vegetable oil2 celery stalks, chopped1 large onion, chopped1 medium red pepper, chopped2 garlic cloves, minced1 (16 oz.) pdg. dry black-eyed peas1 large smoked ham hock (3/4 lb.) (ham bone)2 (13 3/4 to 14 1/2 oz.) cans chicken broth1/4 tsp. crushed red pepper1 bay leaf2 tsp. salt, divided4 c. water2 c. regular long grain rice
Directions
Heat oil. Add celery, onion, and red pepper. Cook 10 minutes. Add garlic. Rince peas. Add peas, ham hock, broth, crushed red pepper, bay leaf, 1 tsp salt, and 4 cups water to celery mixture. Heat to boiling; reduce heat and simmer 40 minutes. Prepare rice using 1 tsp salt. In a large bowl, combine pea mixture and rice.

Makes 20 accompaniment servings (1/2-3/4 cup each)
