Cumin Quinoa with Sauteed Vegetables

1 1/2 c chicken broth1 c quinoa3/4 t. cumin1/4 t. oregano1/4 t. red chile powder1/2 t. salt1 T. butter1 large red onion, 1/2" julienne1 large green bell pepper, 1/2" julienne1 large red bell pepper, 1/2" julienne2 T. olive oil1 c frozen peas, thawed1/4 t. salt1/4 t. black pepper
Quinoa: Bring chicken broth to a boil with cumin, oregano, chile powder, salt and butter. Stir in quinoa. Simmer on low heat for 15-20 min until quinoa is done and opened.
Meanwhile, saute red onion, red and green bell peppers in olive oil over medium heat until soft and just beginning to brown. Season to taste with salt and pepper.
Toss quinoa in a large bowl. Add pepper mixture and peas.
