Indian Spiced Lentils

Ingredients
1 C lentils3 C water1/2 t turmeric1/8 t cayenne (optional)2 T olive oil1 medium onion1 t cumin3 cloves garlic 1 t salt
Directions
Combine lentils, water, turmeric and cayenne in a medium saucepan. Bring to a boil over medium-high heat. Cover with a vented lid and reduce heat to simmer for 30 minutes until lentils are tender.

In the meantime, pour olive oil in skillet. Add cumin and stir. Add onion, garlic and salt. Stir frequently until onion is slightly browned and thoroughly cooked.

When lentils are thoroughly cooked, add onion mixture to lentils and stir. Serve over brown rice.

Makes 4, 3/4 cup servings.
