Aduki Bean, Green Chili, Red Lentil Pilaf

Ingredients
Amaranth Grain, 1/4 cupAduki beans (Eden Organic brand, no salt added, fat free), 1 canCollege Inn Chicken Broth - 99% Fat Free, 4 cupGreen Chili Peppers, canned, 1 cupOnions, raw, 1 cup, choppedGrapeseed Oil, 2 tbspLentils, 2 cupFlax Seed, 3 tbspTahini, 3 tbspCumin, ground, .5 tspChili powder, .25 tspCelery salt, .125 tsp
Directions
Rinse and then soak lentils in water.

Heat oil in a large stock pan. Saute onions until soft. Add can of green chilis and spices, while continuing to saute the onions.

Add chicken broth and beans. Bring to a boil. Add lentils, amaranth, flax seed, and tahini sauce. Simmer until the lentils and amaranth are soft.
