Artichoke Heart Pasta (La Dolce Vegan)

Ingredients
Penne pasta (for about two people)4 large garlic cloves, minced4 large button mushrooms, roughly chopped2 tbsp olive oil16 oz jar of marinated artichoke hearts, drained and chopped8 sun-dried tomatoes1/4 cup vegetable stock1-1/2 roma tomatoes, roughly choppeddried basil and parsley
Directions
Bring salted water to a boil and cook the pasta. While the pasta is cooking, saute the garlic and mushrooms in the oil in a large saucepan on medium-low heat. When the mushrooms start to soften, add the artichoke hearts, sun-dried tomatoes, and vegetable stock. Bring to a boil, reduce heat, and let simmer for five minutes. Drain the noodles and return to its pot. Add the artichoke hearts sauce, chopped tomatoes, basil, and parsley. Toss together and serve immediately.

Makes 3 large servings or 4–5 small.
