Arugula-cherry salad w/ blue cheese

Ingredients
1 tablespoon of red wine vinegar or sherry vinegar1/8 teaspoon salt1/8 teaspoon black pepper[preferably ground peppercorns]2 tablespoons of extra light olive oil3 tablespoons of fresh chopped tarragon,divided6 cups arugula2 cups pitted halved cherries1/4 cup crumbled blue cheese
Directions
1. whisk vinegar.salt,and pepper in small bowl until salt is dissolved; slowly whisk in oil.Stir in 2 tablespoons of tarragon.
2.combine arugulaand cherries in large bowl; toss with enough dressing to lighty coat.toss with remaining 1 tablespoon of tarragon.sprinkle with blue cheese .
variations:
use fresh baby spinach and boston or bib lettuce in place of arugula.
try crumbled soft goat cheese or garlic herb cheese in place of blue cheese.
turn into main course by adding 2 cups turkey,cooked and diced or sliced roast beef.
for extra crunch add 1/3 cup slivered almonds.
